7 awesome things you can do with carrots

Carrots - so good for you, so versatile.
Everyone takes carrots for granted. They've been around so long, that we kind of look at them as one of those boring old vegetables Mom makes you eat, without thinking about their nutritional value.

But it turns out, they should be classed as a superfood!

Carrots are loaded with vitamin A and dietary fiber, and are also a good source of vitamins C, K, B6, potassium and magnesium, along with other nutrients.

They are a rich source of antioxidants and some studies have linked carrots with a lower risk of cardiovascular disease. Carrots are helpful in maintaining a healthy reproductive system as well as good cognitive function. They even help your eyesight.

But you don't have to be a whiz in the kitchen to enjoy your carrots. Check out some of these tasty - and simple - ideas to get them in your daily diet!


1. Munching raw

This is the most obvious way to get your daily dose. Resist the temptation to peel them if you're buying organic, as the skin has a high nutrient value!

The best part about eating them raw, is they are quick, cheap and convenient - you can take them with you while you're around the house, or even on your walk outside!


2. Carrot juice

Start your day right with a delicious orange-colored juice - made from carrots!

Sweet and nutritious, you can even experiment, by throwing in some orange and ginger, or even some other fruits for a yummy complex flavor. If you want to add to the health hit, you can also add a few spinach or kale leaves (the carrot will hide the flavor!)


3. Carrot smoothie

Similar to a juice, but of course with the goodness of milk. I recommend people use organic milk, or if you prefer to stay away from dairy, an almond or rice milk will work equally well.

You can add other fruits like banana or pineapple, and even ginger and tumeric for that added nutrition.


4. On salad

Sure it's obvious, but how many of us actually overlook adding carrots to our salad? Not only does it make it look more appealing, but it can add a vital sweet element to what can otherwise be one of the more bland dishes in your day.

Grated, sliced in sticks or circles, this will transform your green experience!


5. Carrot mash

Like your mashed potatoes? Consider chopping up some carrot before you heat up the burner!

Carrots add a fresh dimension to mash and can broaden the flavor without having to add cheese or an other less healthy ingredient. Instead you'll get a nice sweet hit and the knowledge you're doing your body a favor.

Experiment with other root vegetables, greens, even corn - make your own delicious and unique side dishes!


6. Carrot soup

We're heading into cooler weather, and what better way to fight the cold than a nice winter warmer that also happens to be a healthy option?

Add ginger (are you seeing a pattern here?), onion, leeks, garlic, and lentils for a beautiful and pleasing aromatic dish which will keep you warm from the inside out!


7. Carrot cake

Put down that chocolate cake! If you feel the need to indulge your sweet tooth, consider a nice carrot cake instead. Often with less sugar than other cakes (the natural sugars in carrots do the heavy lifting), this can be a healthful alternative to more traditional, heavier desserts.

Just be careful you're not adding too much extra sugar if you make it yourself.
